Founders Maarten, a former sensory judge at the World Barista Championship, and Mark, a barista and barista trainer, established Giraffe in Rotterdam in 2013. They chose the giraffe as their mascot both for their shared passion for African coffees and because giraffe’s height allows it to access ripe fruit hidden from other animals.

Giraffe is another roaster I discovered around 2022, and in 2026, I had the chance to meet the people behind their generous 350g bags of coffee.

At their stand at the Amsterdam Coffee Festival, Roos, the brand’s education director, gifted me Giraffe’s latest release: Pink Honey.

It is a microlot from El Vergel Farm in the Tolima region of Colombia. The coffee cherries undergo a 36-hour anaerobic pre-fermentation, followed by a 120-hour fermentation period.

With a velvety medium body, and being aromatic and complex, Pink Honey was a joy in my mornings. The acidity is citrusy, and the flavor notes range from orange and raspberry to rose.

No estande deles no Festival de Café de Amsterdam, Roos, a diretora educacional da marca, me presenteou com o mais novo lançamento de Giraffe: o Pink Honey.

Trata-se de um microlote da Fazenda El Vergel, na região de Tolima, Colômbia. As frutas passam por uma pré-fermentação anaeróbica de 36 horas, seguida de uma fermentação de 120 horas.

De corpo médio aveludado, aromático e complexo, Pink Honey foi uma alegria nas minhas manhãs. A acidez é cítrica e as notas passam por laranja, framboesa e rosas.
